Cinnamon Sugar Pretzels
Preheat oven to 300 degrees.
Bake 30 minutes stirring twice during baking.
1 (10 oz) bag pretzels
1/2 cup vegetable oil
1/2 cup sugar
2 teaspoon cinnamon
Pour pretzels into a roasting pan.
Mix together oil, cinnamon and sugar.
Pour on pretzels, stir to coat.

CHICKEN/BROCCOLI QUICHE
Preheat oven to 350 degrees
Bake until knife inserted in middle comes out clean, 30 to 40 minutes.
Top with remaining 1 cup of cheese and melt in oven for a few minutes.
1 (10 oz.) pkg frozen chopped broccoli, thawed
3 cups shredded cheddar cheese
1 ½ cup cooked and chopped chicken
½ cup chopped onion
1 clove garlic, minced
1 ½ cup milk
3 eggs
¾ cup Pioneer baking mix
¾ teaspoon salt
¼ teaspoon pepper
½ teaspoon Italian spice
Dash of paprika
Grease 9 ½ or 10” pie pan (9” pan is too small).
Mix in pie pan broccoli, 2 cups of cheese, chicken, onion & garlic.
In blender mix eggs, milk, baking mix, salt, pepper and spices until well blended.
Pour over chicken and vegetables.

LEMON VELVET CAKE
Heat oven to 350 degrees.
Bake approximately 45 minutes or until toothpick comes out clean when tested.
1 (18.25 OZ.) package lemon cake mix
1 cup water
1 teaspoon lemon extract
1 (3 oz.) package lemon flavored gelatin mix
¾ cup corn oil
2 large eggs
2 cups powdered sugar
½ cup fresh lemon juice
1 tablespoon lemon zest
Whipped topping (optional)
Lightly grease and flour a Bundt pan.
Combine cake mix, water, lemon extract, dry gelatin mix, oil & eggs. Beat with electric mixer for 3 minutes.
Pour batter into prepared pan and bake.
Prick entire cake with a fork.
Mix powdered sugar, lemon juice and zest. Pour on top of warm cake.
Serve plain or with whipped topping

Mexican Wedding Cake
350 degrees for 35 to 40 minutes
2 cups flour
2 cups sugar
2 teaspoons baking soda
2 eggs
1 cup chopped pecans
20 oz. can crushed unsweetened Pineapple
Mix together and pour into Greased and Floured 13 x 9pan.

“Frosting”
*Pour over hot cake*
1stick of butter
2 teaspoons of vanilla
8 oz. cream cheese
2 cups powered sugar
Beat till creamy

Pumpkin Bread
Oven At 350 degrees for 45 minutes
Serves 7 Loaves
3 1/2 cups Flour
2 tsp Baking Soda
1 1/2 tsp Salt
3 cups Sugar
1 cup Vegetable Oil
4 Eggs
2/3 cup Water
1 tsp Cinnamon
1 tsp Pumpkin Spice
1 tsp Nutmeg
1 tsp Cloves
1 tsp Ginger
1can {16oz} of Pumpkin
1 cup Chopped Pecans

Mix well and pour into greased pan and bake.

Frog-Eye-Salad
Serves 25
1 Cup Sugar
2 tblsp Flour
2 and 1/2 tsp Salt
1 and 3/4 Cup Pineapple Juice***
2 Beaten Eggs
1 tblsp Lemon Juice
3 Qt. Water
1tblsp Cooking Oil

1 "16oz" Package of Orzo otherwise called "Acini de Pepe"
3 "11oz" Cans Mandarin Oranges ~ Drainied
2 "20oz" Cans Crushed Pineapple ~ Drained *** NOTE: You Will Need The Juice!
1 "9oz" Carton Non-Dairy Whipped Topping
1 Cup Minature Marshmallows ~ Optional
2 and 1/2 Cups Coconut ~ Optional

Combine Sugar, Flour and 1/2 tsp of the Salt.
Gradually stir in the Pineapple Juice and Eggs.
Cook over moderate heat, stirring until thickened.
Add Lemon Juice.
Cool mixture to room tempature.
Drain all the fruit and let setout till they dry out alittle.
Don't Throw JUICE ~ What You Drained*** Away!

In separate Pot, Bring water and remaining 2 tsp of salt and oil to a boil.
Add Orzo. Cook at at Rolling Boil until Orzo is done!
Rinse with Water.
Drain and Cool to Room Tempature!

Combine egg mixture and Orzo.
Mix lightly and thoroughly.
Refrigerate overnight in airtight container.
NOTE : Can stay in Refrigerator for a week! ***

Pumpkin Cake
Has 2 Ingredients
1 box yellow cake mix
1 can pumpkin puree {NOT pie filling}

Mix together and bake at 350 degrees for about 35-40 minutes.
Grease and flour pan.
This cake is awesome plain; however,
~ after the cake cools you can sprinkle with powered sugar or glaze.
